Banana Bread Oatmeal (Vegan, WFPB)

I have been on a big rolled oatmeal kick as of lately, which means I have been making my chocolate, banana, peanut butter oatmeal quite a bit. But I recently ran out of old fashioned rolled oats and luckily had some steel cut oats on hand. So I decided I would finally put together and share this recipe. The first time I made this recipes was this past Fall while my wife and I were on a camping trip in the Shenandoah Valley. Normally when we are camping we only bring one blue camping pot and do all of our cooking on a single propane burner. So in our blue pot we made what has been now named our banana bread oatmeal. The key to getting a real good banana bread flavor is to make sure the bananas you use are nice and ripe and let them cook with the oats so that they break down and sweeten up.

Here's what you need! (Serves 2)

  • 3 ripe bananas

  • 2 cups water

  • 1/2 cup steel cut oats

  • 1 tbs maple syrup

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

Directions:

  1. Cut the bananas into 1/2" pieces

  2. Add all of the ingredients into a pot on the stovetop

  3. Mix together well

  4. Cover and simmer for 25-30 minutes on a low to medium heat (stirring occasionally)

  5. Uncover and stir

  6. Serve as is or with some fresh fruit and a dash of cinnamon

Hi Gabriel, I’m new to WFPB eating and I just tried your banana bread oatmeal. It tastes great but mine took almost an hour to cook. I followed the recipe without deviating, what caused the cook time to be more? Thanks, great recipe.
