I have been looking to incorporate a larger array of legumes into my recipes and today is the day of the black eyed pea. I am a big fan of black eyed peas, and I find that I am able to use them in a lot of different recipe that might call for black beans. Most of you know how much I love making great bean burgers, so I wanted to share my easy black eye veggie burger recipe. I am planning on making a few of these burgers for a couple get togethers that I have planned for watching the remaining college football bowl games and the last few weeks of the NFL season. If you are not a fan of black eyed peas, make sure to check out a few of my other burger recipes including my "Go Big Red Bean Burger" and porkless burgers. I really enjoy adding different variations of spices to my veggie burgers, so feel free to get creative and if you go ahead and give this recipe a try let me know what you think and share a picture on my facebook page of how it turned out for you.

Here's what you will need!
3 cups of cooked black eyed peas (drained & rinsed)
1 cup of cooked brown rice
1 cup of raw quick cooking oats
1 tbs soy sauce
1 tbs ketchup
2 tsp garlic powder
2 tsp onion powder
2 tsp paprika
1/4 tsp black pepper
Stand mixer or large mixing bowl
Directions:
Add the black eyed peas into a large bowl
Mash the peas until there are no whole beans left
Add in the rest of the ingredients
Mix by hand or a large spoon for ~60 seconds until you have a evenly combined mixture
Form the mixture into patties with a patty press or by hand
Place the formed patties on a baking sheet lined with parchment paper
Bake at 400 F for 25-30 minutes
Enjoy!
