Cinnamon Roll Waffles

After making my pumpkin spice waffles over the weekend, you could say Dr Miller and I have stayed in the waffling mood. We both got inside around the same time tonight and were wondering what we would make for dinner. I suggested waffles and Dr Miller threw in the idea of a cinnamon themed flavor. So I warmed up the non-stick waffle maker and got to blending up all of my ingredients. These turned out just as fantastic as the pumpkin flavored waffles and made a delicious brinner (breakfast at dinner :) ). We ended up topping our waffles with a bit of maple syrup and a dusting of cinnamon.

For the waffles

  • 1 cup rolled oats

  • 3/4 cup plant based milk (oat, cashew, soy, almond, etc)

  • 1/4 cup maple syrup

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  1. Add all of the ingredients into a blender. Blend on a medium/high speed for 2-3 minutes.

  2. Pour appropriate amount of batter into your waffle maker and cook until golden brown.

Delicious, easy recipe - thank you! They also freeze well and are perfect reheated in a toaster oven. My second time making them, I added about 1/8 cup of sliced almonds, and that was also delicious. Today I used dates instead of maple syrup to sweeten them. I put four dates (deglet noor) into the vitamix and then brought the soy milk level up to 1 cup, blended until the dates were pretty much liquified, then added the rest of the ingredients. The waffles came out very lightly sweetened, which was perfect for me, but if I make them for guests, I will probably go with six dates to make it a tad sweeter. Thank you for the great recipes!

We just made these for breakfast and the clean up was a breeze by making the batter in the ninja blender :) Plus, we are in the middle of a kitchen remodel and they were super easy (my 10 year old made them) We are making another batch to freeze, thanks for sharing! Will order the cookbook asap, Ive got so many screenshots on my phone of your recipes-always yummy!

Hi there!

From my past experience, there may still be sticking even with non-stick cookware. To eliminate this from happening, I spray the Belgian waffle maker; griddle iron; - whatever the appliance is - with a cooking spray i.e., Pam spray or other cooking spray of choice. This has become automatic for me because the sticking occurred repeatedly. Good luck with your cooking; I hope this suggestion is helpful to you and others. 😉
