Naturally, I get asked a lot of questions about what my wife and I eat on a regular basis. The simplest answer to that question, is that we eat everything that you can find on my channels and this website. These are the foods and recipes that I used to lose 100 pounds and have continued to eat as I've kept the weight off. But with all of the recipes that I make, I think there is one "go to" that I seem to always make whenever we are in a hurry and need a quick meal, or whenever I just want to make something simple. And that is my easy vegan tacos. I love using my InstantPot brown rice and my IP black beans on these tacos. Sometimes I will use some of my homemade fat free refried beans or my vegan sour cream and even one of my easy jackfruit recipes, but on a regular basis we enjoy these tacos with a few simple ingredients that we always have ready to use in our fridge. I hope you enjoy these, and if you have any special ways of making your tacos, I would love to hear it!

Here's what you will need!
3 corn tortillas
1 cup cooked black beans
1 cup cooked brown rice
Salsa
Lime
Oven
Directions:
Toast your tortillas in the oven for 5 minutes at 375 F
Evenly add on your rice and beans to each taco
Add as much or as little salsa as your taste buds desire
Squeeze some fresh lime over your tacos
Enjoy!
