Marble Mashed Potatoes (WFPB, Vegan)

As we begin to jump into the holiday season, I am very excited to begin sharing some of my favorite vegan and whole food plant based holiday recipes! These are recipes that have been vetted to ensure that they are not only a hit with your veg-friendly family, but also your family and friends who might be less experienced with a plant based diet. I will be remaking and sharing some of my all time favorite Thanksgiving and Christmas recipes, only now they will be vegan, delicious and whole food plant based. Todays recipe is my marble mashed potatoes. I chose to cook both my white and sweet potatoes together in my InstantPot with great success. But if you do not have an InstantPot you can always prepare your potatoes using your preferred method and end up with a great end product of marble mashed potatoes. I used a seasoning blend that gives a good amount of depth to this recipe while staying with a savory focus. The sweet potatoes definitely give a bit of sweetness, but I find that it is not overpowering and compliments the seasonings really well!

Here's the Ingredients!
3 medium sized white potatoes
3 medium sized sweet potatoes
2 cups of water
1 cup of a plant based milk
1 tbs sage
2 tsp onion powder
2 tsp garlic powder
1/4 tsp black pepper
Trivet or steaming basket
Directions:
Place your potatoes onto the trivet inside of the InstantPot
Pour your water into the bottom of the InstantPot
Cook for 30 minutes on the pressure cook setting
Quick or naturally release (either works for this recipe)
In a large bowl mash your sweet and white potatoes
Add in the spices and plant based milk
Mix together thoroughly
