Peaches & Cream Nice Cream (Vegan, WFPB)

We recently spent a weekend in Georgia and after seeing an incredible amount of peach trees, I was inspired to make a peaches and cream nice cream. Growing up I was not a very big peach fan, I'm not sure if it was the fuzzy exterior or the softness of the fruit. But as I have progressed along with my plant based journey I have found that I cannot find a fruit that I don't absolutely love, and peaches are now one of my favorites. They are also a great fruit to make plant based desserts with because even when they are not in season you can find them in the freezer section at almost any grocery store. When I first shared this recipe with Dr Miller I was glad that I had taken a few bites, because when I walked back into the office the rest of the bowl of nice cream had disappeared!

Here's what you will need!

• 2 cups of frozen peach pieces

• 1/3 cup of a plant based milk

• 1/2 tsp vanilla extract

• Food Processor

Directions:

1. Place all of the ingredients into the food processor

2. Process together for 60-90 seconds (stopping and scraping the sides down if needed)
