As Fall has come and the weather is cooling down, one of my favorite foods to prepare is vegan mac n' cheese. Now there are a lot of vegan options available, but I like to make a healthy version without a long list of ingredients or added fats. This recipe is one I love to make in advance and have ready in the fridge for a quick meal with some rice or noodles. You can also use this sauce to go in a baked mac n' cheese recipe. I love the added smoky flavor of this recipe, but if you would like to omit it you can and the flavor is still outstanding. This is a favorite recipe of mine to make for when we are having guests over to surprise them with a completely healthy and delicious vegan version of macaroni and cheese. I like to keep my sauce nice and thick for this recipe, but if you like yours to be thinner you can always add in some more water to achieve your desired consistency.

Here's what you will need!
2 perfectly cooked sweet potatoes (peeled)
1 1/2 cups water
1/4 cup nutritional yeast
1 tbs soy sauce
1 tsp liquid smoke
1 tsp sage
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/4 tsp ground black pepper
Directions:
Place all of your ingredients into the blender
Blend on medium-high speed for 30-45 seconds
Enjoy!

Can the sauce be kept in the fridge for a couple of days?
