Vegan Apple Crisp (WFPB, Oil Free)

My favorite phrase when it comes to the holidays is, "So who is ready for dessert?". Just thinking about it now, makes me wish I was already sitting at the holiday dinner table. I also know that this time of year and that time of dinner can also be the least health promoting time of year for many families. But I am here to change that and show that dessert can be just as delicious but made with whole plant food ingredients and thus be much more health promoting. I hope that has been made evident by the array of WFPB Holiday Recipes that I have already shared this year. And todays vegan apple crisp is no different, it is completely whole food plant based and still perfect to be shared as a dessert. I will also mention that in coming up with this recipe, my apple crisp also made it's way to the breakfast table about as many times as it was enjoyed for dessert. The ingredients list for this recipe is extremely short and should hopefully be things that you already have in your pantry or can be easily obtained at your local grocery store.

Here's what you will need!
3 medium sized sweet apples
2 cups of rolled oats
1/2 cup maple syrup (split)
1 tsp vanilla extract
1 tsp cinnamon (split)
Baking dish
Directions:
Slice the apples into 1/8"-1/4" pieces
In a large bowl mix the sliced apples with 1/2 tsp cinnamon and 1/4 cup maple syrup
Layer the apples on the bottom of your baking dish (I love using a glass pie dish)
In a large bowl mix the oats with 1/2 tsp cinnamon, 1/4 cup maple syrup and the tsp of vanilla extract
Cover the layered apples with the oat mixture
Bake at 375 F for 35-40 minutes
