Plant Based Bread Pudding (Vegan, WFPB)

I know that many individuals dread the upcoming holiday season for the pure fact that they will have to endure dinner after dinner of non compliant fatty animal based foods. It can really be one of the hardest times of the year to stick with and eat a whole food plant based, vegan diet. I know of many stories of individuals who spent their entire Thanksgiving or Christmas party snacking on grapes and carrot sticks. Now those are two delicious and healthy options, but I want to help everyone enjoy a tasty holiday meal while sticking with whole food plant based ingredients. I also look at this time of year as the biggest and best time to introduce this way of eating to the people who need it the most, our loved ones. I think if we are able to serve delicious and healthy plant based options during the holidays, then we already have a foot in the door when it comes to helping our loved ones transition to a healthier and much more compassionate way of eating. Today's bread pudding recipe was made to resemble the bread pudding I grew up loving to eat when the weather began to chill down. I always recommend whole wheat bread when, but for this recipe if you believe non whole grain bread will be more palatable to your friends and family then by all means go for a vegan and oil free loaf of your choosing. Here's what you will need!
1 day old vegan and oil free baguette
2 cups of a plant based milk
1/2 cup maple syrup
1/4 cup corn starch
1 tsp vanilla extract
1 tsp cinnamon
Baking dish
Directions:
Cut the baguette into 1/4"-1/2" cubes
Mix the corn starch into the 2 cups of the plant based milk
Mix the cinnamon, maple syrup and vanilla extract into the liquid mixture
Pour the liquid mixture into the baking dish
Add in the chunks of bread
Mix the bread and liquid until the bread is completely saturated
Press the bread down to ensure an even bake
Bake at 375 F for 35-40 minutes
